Malteser Fudge Slice

Post by Guest on Mon Mar 23, 2009 7:33 pm

This is actually a weight watchers recipe, but you'd never know!!
It's really moist &delicious but much lower fat than regular chocolate cakes.
You can throw it together in a couple of minutes and only need 2 bowls and a cake tin so minimal washing up too!!

Dry ingredients
1 cup self raising flour
3/4 cup cocoa powder
165g bag of maltesers

Wet ingregients
2 eggs, lighty beaten
3/4 cup sugar
2 tablespoons vegetable oil
400g light vanilla fruche

1. Preheat oven to 180 degrees. Line a square tin or lamington tin with baking paper, including the sides.

2. Sift the flour and cocoa powder into a large bowl. Stir in the maltesers.

3. In another bowl, combine the eggs, sugar, oil and Fruche. Stir thouroughly.

4. Fold the wet ingredients into the dry ingredients.

5. Pour mixture into lined pan and spread evenly around.

6. Bake 30 mins or until firm to touch. If you use a skewer to test the cake, it will come out wet, this is ok as it's supposed to be moist in the middle. You don't want the mixture to be runny on the skewer, but wet is ok.

7. Serve with dusted icing sugar on top

8. Andie's tip: eat warm with ice cream!!

a really easy and fool proof "wow how good does that look" cake/dessert

get 4 KING size cherry ripe ,or 8 KING size mars, snickers etc.....

make a biscuit base using crushed biscuits and butter. spread that in a good thick layer over a square of thick cardboard covered with foil.pop in the fridge to set.
now take your biscuit base still on the board ,and build the walls of your cake using the whole chocolate bars. with cherry ripe just one for each side and tie a pretty ribbon around to hold in place.cherry ripes build the wall outside the edge of the base. The mars or snickers ,lay one bottom down on all 4 sides,on top of the base, then do a second layer overlapping the bottom layer corners.
Now take some chocolate mousse or cheesecake mix and add that in the middle for the filling...back in the fridge to set.

top or dress as desired using bits of chocolate bars, berries & /or cream or whatever u want.

The cakes look spectacular and are insanely easy !
and YUMMY

Update on Malteser fudge slice. Just made my second one last weekend and took to a B B Q. Another lady there had made a dessert and had made a raspberry sauce to go with it. Well we all ended up putting it on the Maltese fudge slice, it was absolutely delicious. Here is how to make the raspberry sauce - 300 gm pkt frozen raspberries, 3/4 cup icing sugar, 3/4 cup orange juice. PuUree all together , then put through a sieve if you don't want pips. I reckon it would be good with strawberries as well.
